Breakfast casseroles can seem complicated, but they’re actually really easy to throw together – and even easier to customize. A breakfast casserole can make it easy to cook for a crowd, or allow you to cook once for yourself and eat for an entire week.
If you want to cook the perfect breakfast casserole, here are the essential steps.
Start with a greased baking dish. We prefer a glass 9×13.
Choose your base. You can go in any number of directions here. Roll out refrigerated crescent dough, or use frozen hash browns or country potatoes. If you’re watching carbs, you can completely omit this step and still end up with a satisfying breakfast casserole.
Select your meat. The possibilities are endless. Cooked, ground sausage is a popular choice. Or chop up leftover breakfast links. Fry up and crumble some bacon. Cube some ham. Whatever you’ve got, it can go in a breakfast casserole.
Choose your veggies. If you don’t believe veggies have a place at the breakfast table, skip this step. But if you want to add flavor and nutrition, this is a great way to do it. Popular options are onions, peppers, or mushrooms. You can also use shredded zucchini, chopped spinach, or kale. Saute for about 5 minutes or until most of the water has evaporated. Aim for about 1 to 1.5 cups of sauteed veggies.
Eggs + dairy. If you’re using a 9×13 pan you’ll want to use a dozen eggs. If you’re using a 9×9 or 8×8, cut the number of eggs to 9. Whisk them with 1 cup of milk, cream, full-fat canned coconut milk, or your favorite dairy alternative (¾ cup for a smaller casserole).
Customize your flavor. Sure, you could sprinkle salt and pepper into your egg mixture. But you can add up to ½ cup of additional liquid to infuse your casserole with a unique flavor. Some great options are cayenne pepper, salsa, salsa verde, or pesto.
Add cheese. Stir between ½ and 1 cup of cheese into your egg mixture. Anything will work here – cheddar, pepper jack, feta, goat cheese…you’re only limited by your imagination.
Bake and enjoy. Mix your egg mixture and veggies together, pour over your base, and bake at 350 for 45 minutes.
