Bacon and Egg Biscuit Cups

Bacon and Egg Biscuit Cups

Easy, delicious, and heck, they're even portable. They make a delicious breakfast or brunch dish and they're a total crowd pleaser. Makes 12 biscuit cups.

Ingredients:

  • 12 slices Fletcher’s bacon
  • 1 can refrigerated biscuits
  • 12 eggs
  • Salt & pepper

Directions:

  1. Preheat oven to 350°F. In a nonstick skillet, cook bacon over medium heat until about halfway cooked but not crisp, about 4 minutes, turning once. (It will continue to cook in the oven.) Set aside.
  2. Spray 12 muffin cups with nonstick cooking spray.
  3. Separate biscuit dough and cut each biscuit into half.  
  4. Press 1 biscuit half into each muffin cup, pressing and molding dough three-fourths of the way up sides of cups.  
  5. Cut each bacon slice in half and place two half strips, criss-crossed, into each muffin cup.  
  6. Press bacon and biscuit dough down to form a cup, and then crack an egg into each cup.
  7. Season lightly with salt and pepper.
  8. Bake about 25 to 30 minutes or until egg whites are set.
  9. Run a small knife around cups to remove. Serve immediately.
